Veggie Scrambled Eggs
Ingredients:
- 1 tbsp olive oil
- ½ green bell pepper (chopped)
- ½ chopped onion
- ½ tomato, diced
- shredded cheddar cheese (optional)
- 6-8 eggs
- Salt and pepper to taste
In heavy skillet, sauté green pepper, onions and tomatoes, in olive oil.
Beat eggs with a fork and add to sautéed vegetables. Cook until done. Can add shredded cheddar cheese as garnish on top. Add salt and pepper to taste. Serve while hot.
