Homemade Catsup

Homemade Catsup

Ingredients:

Place tomatoes, onion, bell pepper, hot peppers, and vinegar into a deep pan, leaving 1-inch at the top. Pour sugar into your pot until you cannot put any more in,  then shake your pan until the sugar is compressed as much as possible.  When you cannot get it to go down anymore, then you’ve got enough sugar in it!  Cook slowly, on as low a temperature as you can, for at least 3 hours.  It gets very think, almost a jelly-like consistency. You will start out with a huge amount, and it will cook down to about 2 pints.

*A pressure cooker is also an option, as it has a very think surface on the bottom. This has to cook a long time so you want a pressure cooker type pan to avoid sticking.
