Lindsay’s Roasted Vegetables

  • 1 red bell pepper
  • butter
  • 1-2 onions
  • olive oil
  • 1 yellow squash
  • garlic
  • 1 zucchini
  • cayenne pepper
  • 2 tomatoes
  • parsley
  • oregano
  • breadcrumbs
  • parmesan cheese (shredded)

Cut up vegetables to bite-size pieces. Place in a hot

skillet with olive oil and seasonings. Simmer, and then

cover with bread crumbs and parmesan cheese.
